Marry Me Chicken – Nourishing Version (Serves 1)

Ingredients

  • 100g chicken breast
  • ½ tsp olive oil
  • ½ clove garlic, crushed
  • ½ tsp grated ginger
  • Pinch chili powder
  • Pinch turmeric
  • Cracked black pepper
  • Few fresh thyme sprigs
  • 1–2 curry leaves
  • ⅓ tbsp light mayo (from a base ratio of 1 tbsp per 300g chicken)
  • 1 small tomato, chopped
  • 1 tbsp onion, finely diced
  • ¼ cup water
  • Fresh dhania (coriander), to finish
  • 150g cooked basmati rice

Method

  1. Lightly season the chicken with turmeric, chili, and pepper.
  2. Heat olive oil in a nonstick pan. Sear the chicken with garlic, ginger, thyme, and curry leaf until lightly browned and aromatic.
  3. In the same pan, sauté onion and tomato until softened. Add water and allow it to simmer.
  4. Remove pan from heat, stir in the mayo until the sauce becomes creamy and emulsified.
  5. Return the chicken to coat in sauce and let it simmer gently for 1–2 minutes.
  6. Spoon over basmati rice and finish with fresh chopped dhania.

Serve with steamed mixed vegetables for volume and balance.
