Vegan Pancake Stacks (Which Are Non-Vegan Friendly!)

How can something so simple taste so good? These vegan banana pancakes prove that you can eat something quick, satisfying and healthy for breakfast.

Non-contaminated rolled oats are also gluten-free and full of significant health benefits. They are high in fiber which helps you stay full faster and longer. Oats are an excellent source of antioxidants and can help regulate blood sugar.  If that wasn’t enough, rolled oats have vitamins, minerals and 26 grams of protein per cup!

For variety, stir in healthy additions to your batter like ground flax, berries or seeds to keep with the vegan theme. Top with some unsweetened coconut for crunch and maple syrup for sweetness.

The easiest and healthiest pancakes you can eat, even non vegan eaters will enjoyed them!

Ingredients:
• 1 cup rolled oats
• 2 small/medium ripe bananas
• 1 tsp baking powder
• 1/4 tsp vanilla
• 1/4 tsp cinnamon
• 3/4 cup almond milk
Instructions:
1) Combine rolled oats, 2 ripe bananas (should be yellow with brown specks/spots), baking powder, vanilla, cinnamon, and almond milk in a high-speed blender. Blend on high until smooth and creamy. Set aside to thicken for ~5 minutes.
2) Meanwhile, heat a non-stick pan on low-medium temperature. Once warm, rub the pan with coconut oil. Use a 1/4 measuring cup to pour the batter into even pancakes. Once air bubbles form on the surface of each pancake (should take a few minutes), flip to cook the other side.
3) Serve pancakes with fresh fruit, maple syrup, or any topping of choice. Enjoy!
